Recipe:
De-bone standing Prime Rib – use ribs for making stock for gravy with roasted carrots, onions, and celery for 1 hour at 400° F.

Use an internal standing thermometer

Preheat oven to 250° F
Roast to an internal temperature of 118° F – approximately 3 hours depending on the starting temperature of the beef
Pull and cover with aluminum foil
Let rest for a minimum of 30 minutes
Cover with softened butter and rosemary
Preheat oven to 500° F
Return roast to oven for approximately 10 minutes, or until a crust has formed.
Alternatively, use the broiler, but monitor the entire time to prevent burning.

Serve immediately, as the roast will already be rested internally.

Enjoy with gravy and/or creamy horseradish.

This will yield a perfect medium rare throughout without a sous-vide. Enjoy!

  1. I forgot to add, generously season the roast with salt and pepper after deboning and let sit overnight or at least for 12 hours before cooking to dry brine the meat. This imparts better flavor throughout the meat and creates a better crust. Also, use oiled twine to truss the Prime Rib after seasoning. Remove this twine prior to final roasting at 500 F.

    Also, collect the roasting drippings from the pan to use in your gravy or for a Yorkshire pudding.
